Red Cabbage & Corn Slaw – Hiroko’s Recipes


Red Cabbage is very crunchy. For this salad, I slightly soften it first. You can use your favourite Coleslaw dressing, but it shouldn’t be too sweet, as Sweet Corn adds lovely sweet flavour to it.

Ingredients

300g Red Cabbage *1/6 of large head
1 Carrot
1/2 teaspoon Salt
1/2 cup Corn Kernels *Frozen Kernels are fine
Freshly Ground Black Pepper
1/2 tablespoon Sugar
4 tablespoons Japanese Mayonnaise
1 & 1/2 tablespoons Rice Vinegar

Method

Place thinly sliced Red Cabbage and Carrot in a mixing bowl. Add Salt, mix well, then set aside for 10 minutes.Add all other ingredients and mix to combine well.
