Spinach Nori Rolls | Hiroko’s Recipes


If you like ‘Goma-ae’ Spinach, you would wish to try this dish. Blanched Spinach is rolled with Nori (Seaweed Sheet) and served with the sweet ‘Goma-ae’ sesame sauce. You need no special tool to roll. It looks quite sophisticated. A perfect entree when you entertain friends and family.

4 to 6 Servings

Ingredients

1 bunch (*about 300g) Spinach
1 teaspoon Soy Sauce
1 to 2 sheets Nori

‘Goma-ae’ Sauce
1 tablespoon Toasted Sesame Seeds
1/2 tablespoon Sugar
1/2 to 1 tablespoon Soy Sauce

Method

Wash Spinach well and blanch in boiling water. Dip in cold water to stop cooking further, drain well and squeeze to remove excess water.Cut off the bottom ends and drizzle 1 teaspoon Soy Sauce over. Set aside.Grind Toasted Sesame Seeds, add Sugar and Soy Sauce and mix well to make sauce. *See ‘How To Grind Sesame Seeds Using A Plastic Bag’.Squeeze Spinach to remove excess liquid and make 2 or 3 logs in even thickness. Place 1/2 sheet of Nori on a flat surface, place a log of Spinach, and tightly roll it up. Set aside until Nori gets moist. Repeat with remaining Spinach.Cut into bite sized pieces. Drizzle the sesame sauce over just before serve.
