Enso SG2 Paring Knife

The Enso SG2 Paring Knife is ideal for peeling, coring, trimming, decorating, and other detail work. Also can be used for chopping small foods, such as garlic cloves or ginger.

THE ENSO SG2 SERIES

Enso SG2 knives are constructed of Japanese SG2 Micro Carbide powder stainless steel, which is enveloped by 101 layers combined with alternating soft and hard stainless steel. The corrosion resistant powder carbon steel has an unprecedented 63 Rockwell hardness and ensures a high degree of purity and strength. The resulting blade is extremely hard, ensuring an exceptionally sharp cutting edge.

The Handle

All Enso SG2 knives feature a black canvas micarta handle with a stainless steel bolster, red spacers and Samurai Crest.

The enclosed full tang handle construction is seamless and ensures strength, durability and balance. The engraved end piece of the handle is made of 18/10 stainless steel, which provides outstanding stability and balance.

The Blade

Enso SG2 blades are constructed of 101-layer stainless steel Damascus with SG2 Micro Carbide powder steel cutting core. The knives are heat treated to a 63 on the Rockwell scale. Each Enso SG2 knife features hand-engraved Japanese kanji that is etched by a Japanese artisan.

The Edge

The blades are hand ground to approximately 12° cutting angle and feature a double bevel edge for right or left-handed use.

Each Enso SG2 knife features blade kanji that is hand-engraved by a Japanese artisan.

The first two Japanese characters of the kanji are Enso which means Harmony in Japanese. The last four characters are Hyaku Ichi Sō-kō, which means 101 Layer Steel.

The Japanese character on the end piece of the handle is Minori which means Harvest in Japanese.
