
Have you tried my ‘Tofu Chocolate Truffles’? This is another example of how to use Tofu for sweets. Simply mix the drained Silken Tofu with softened Cream Cheese, and add Lemon and Sugar. Today I added some Mango, but naturally you can use any fruit.

Ingredients
150g Silken Tofu *drained
4 tablespoons (60g) Cream Cheese *softened
2 tablespoons Caster Sugar
1 to 2 teaspoons Lemon Juice
Fruit *cut into small pieces
Method
Break Silken Tofu into some pieces and place in a paper towel lined colander or fine mesh colander, and place the colander over a bowl. Keep in the fridge for at least 1/2 hour. No pressing is required.Mix the drained Tofu, softened Cream Cheese, Caster Sugar and Lemon Juice until well combined. Alter the amount of Caster Sugar and Lemon Juice to suit your taste. Place the mixture and Fruit in serving glasses.
