Barley & Cherry Tomatoes With Basil Pesto – Hiroko’s Recipes


I love Barley. I add it to soup. I make salad with coked Barley. I even use it for sweet. This is another super easy dish. Just mix cooked Barley with fresh Tomatoes and Basil Pesto!

Makes

1 to 2 Servings

Ingredients

1 cup Cooked Barley
2 to 3 tablespoons Basil Pesto
8 Cherry Tomatoes *cut in half
Some Slices Red Onion *finely shopped
Salt & Freshly Ground Black Pepper

Method

Cook Pearl Barley in plenty of Water in a saucepan. Just simmer with 1 pinch Salt until soft, then drain. *Note: 1/3 cup Uncooked Perl Barley will be about 1 cup when cooked.Mix everything well in a bowl. Season with Salt & Freshly Ground Black Pepper.
