
Avocado goes so well with Japanese seasonings such as Soy Sauce, Wasabi, Japanese Mayo, ‘Ponzu’, etc. Do you know it goes well with Kimchi, the Korean salted & fermented veggies. I had a jar of Wombok Kimchi in the fridge, but it had turned quite sour. Then I mixed it with Avocado, and seasoned it with some Sesame Oil and Sugar. It turned into a delicious side dish!

Ingredients
1/2 cup Kimchi
1 Avocado *cut into small pieces
1/2 teaspoon Sesame Oil *for flavour
1/4 teaspoon Sugar *optional
1 tablespoon Toasted Sesame Seeds
1 Spring Onion *finely chopped
Method
Cut Kimchi into the size that is easy to eat.Place all ingredients in a bowl and mix to combine. *Note: Sugar is optional. I add it when Kimchi is sour.
