Spicy Tuna Roll

The spicy tuna roll is a novel creation and has become incredibly popular all over the world. But you won’t find this roll in Japan. The key to making good-looking rice-side-out rolls is to place a piece of plastic wrap or parchment paper (about the same size as the makisu) on the rice and press lightly before flipping the roll over. This ensures that the rice and nori stick together nicely, which makes rolling and shaping easier.

Minced Tuna and Scallion (Negitoro) Gunkanmaki

Negitoro means scallion (negi) and fatty tuna (toro) in Japanese. Even though the recipe uses lean tuna, it is called toro because minced tuna has a fluffy texture and it seems to melt in your mouth like toro. Sometimes the tuna is seasoned with mayonnaise for the recipe in Japan, but here I introduce you to the traditional recipe using soy sauce.

Traditional Hand-Rolled Sushi

Hand-rolled sushi, which is called temaki in Japanese, is a traditional homemade sushi. There is no need for a special technique to roll, and you can use any ingredients you like. In this recipe I use sashimi tuna and salmon, which are the most popular ingredients for hand-rolled sushi.
