Japanese Mayonnaise and Curry flavour are a good match. One example is my ‘Curry Flavoured Smoked Sausage & Potato Salad’ that I cook quite often. This Egg Salad is perfect for sandwich filling. You may wish to cut Eggs into larger pieces to make a side dish. Boiled Cauliflower or Potatoes can be a good addition to this salad.

2 Boiled Eggs *finely or coarsely chopped
1 tablespoon finely chopped Onion
1 tablespoon finely chopped Parsley
1-2 tablespoons Japanese Mayonnaise
1 teaspoon Curry Powder
1 tablespoon finely chopped Pickled Cucumber *optional
Salt & Pepper
Method
Cut Boiled Eggs finely, coarsely, or even into chunkier pieces depending on how you eat this salad.Add all other ingredients and mix to combine. Season with Salt & Pepper to taste.
