
Next-door neighbours’ Passionfruit plants have invaded our garden and it’s time to harvest the fruit. This year we have a lot more fruit. I have made Cakes with Passionfruit Icing, Passionfruit Panna Cotta, Passionfruit Mess and Passionfruit Smoothie. Here is a new one. This curd is YUMMY!
Ingredients
2 Egg Yolks
1/3 cup Caster Sugar
60g Unsalted Butter *cut into small pieces
3 Passionfruit *about 90g Pulp
Method
Whisk Egg Yolks and Caster Sugar in a saucepan until smooth. Add Butter and Passionfruit Pulp, and whisk over low heat until the mixture thickens.Transfer to a sterilised jar and store in the fridge.
