
As food prices soar, it might be a good idea to start eating more Beans as Beans are not expensive and nutritious. This is a super simple salad of Beans. I added a small can of Tuna as well. Chickpeas and other Beans can be used, but I used Cannellini. You may wish to cook Dry Cannellini (White Beans) as it would be cheaper, but we need to think about cooking time, the cost of gas and electricity. I think Canned Beans are convenient.

Ingredients
1 can (400g) Cannellini (White Beans)
1 can (95g) Tuna
1/4 Red Onion *finely chopped
2 tablespoons chopped Parsley
Salt & Black Pepper to taste
2 tablespoons White Wine Vinegar
2 tablespoons Olive Oil
Method
Drain canned Cannellini (White Beans), rinse under cold water, then drain well.
Drain canned Tuna and place in a mixing bowl. Add other ingredients and mix to combine. The amount of Salt depends on the saltiness of Tuna and your preference. *Note: If you use Tuna in Olive Oil, you don’t need to drain. You probably don’t need to add Oil.
Add drained Cannellini and gently combine.
