
I added No Oil and No Mayonnaise to this salad, but you can get good Oil form Avocado. It is seasoned only with Salt, Black Pepper and Lemon Juice. Fetta Cheese gives pleasant extra saltiness. Edamame (Young Soy Beans) is the essential element of this salad, but it can be substituted with firmly cooked Chickpeas if you can’t find Edamame.

Ingredients
1 can (400g) Mixed Beans
1/2 cup Edamame Beans *thawed if frozen
1/8 Red Onion *finely chopped
1/2 Cucumber
1/2 Carrot
1/2 to 1 Avocado
Salt & Black Pepper
1 tablespoon Lemon Juice OR Vinegar
30g Fetta Cheese *crumbled
Method
Cut Cucumber, Carrot and Avocado into small similar size pieces. Drain Mixed Beans, rinse, drain well to remove water.Place all Beans and Vegetables in a mixing bowl, season lightly with Salt, Black Pepper and Lemon Juice, add crumbled Fetta Cheese, and mix to combine. *Note: You may wish to add some Herbs such as Parsley.
