Have you heard of wholesome and nutritious instant noodles? Try this hearty recipe to make your very own Instant Noodles in a Jar. This recipe makes only one serve however, you can multiply the ingredients and prep meals for the entire work week, saving you time and money!

Ingredients
75g ramen noodles (or any noodles of choice)
4-5 broccoli florets (blanched)
¼ carrot (grated)
¼ package of enoki mushrooms
¼ cup edamame beans (soybeans, blanched)
5 dried shiitake mushroom slices (soaked in water until it softens)
1 tbsp soy sauce (or more to taste)
1 tsp miso paste
1 tsp red curry paste (or yellow/green curry paste to your liking)
¼ tsp chicken bouillon (or vegetable stock powder)
½ tsp ginger (grated)
½ bird’s eye chilli (finely sliced, optional)
Coriander (to garnish)
Spring onion (to garnish)
Lime quarters (to serve)
Instructions
Prepare noodles according to instructions on package, then set aside to cool.
Add soy sauce, miso, red curry paste, chicken bouillon and ginger to the bottom of the jar. Stir to mix well.
Then, layer with carrot, broccoli, enoki mushrooms, edamame, noodles, shiitake mushroom, and garnish with coriander and spring onions.
Seal the jar and refrigerate up to 5 days. When you’re ready to eat, fill jar with boiling hot water and set aside to warm up for 30 secs. Then, squeeze lime over and enjoy!
