Tofu Noodles

MAKES 1 SERVING, 20 MINUTES

Perfect for warm days when you crave something cool and easy to prepare. Blended silken tofu coats the noodles, lending creaminess to the dish. Add flavor enhancers like tsuyu and sesame oil, paired with a few other simple ingredients, and you may discover a new summer favorite. This recipe is completely vegan.

Cook the noodles (without the seasoning packet) as per the package instructions or until al dente. Drain and rinse with cold water, and transfer to a serving bowl.

Pat the tofu dry with paper towels and place it in a blender. Add a pinch each of salt and sugar, and blend until the tofu becomes smooth, resembling a thick mayonnaise.

Add the tofu mixture to the bowl with the noodles. In another bowl, whisk together the soy sauce, tsuyu, and ginger. Pour the soy sauce mixture over the noodles, then top with sesame oil and green onions. Add pepper to taste, and stir to combine.
