Shrimp appear to have long beards and a hunched back, which some Japanese associate with a long and fruitful life. So eat your osechi ebi and enjoy your longevity!

Ingredients
6 shrimp
Spices
1/2 cup dashi soup (or 1/2 cup water with 1/2 tsp hon-dashi (soup stock powder)
2 tbsp sake
1 tbsp soy sauce
1 tbsp mirin
2 tbsp sugar
Preparation
Devein shrimp with toothpicks (See picture)
Mix spices in a sauce pan (dashi soup, soy sauce, mirin, sake) and bring it to a boil.
Add shrimp and boil for 4 minutes over low heat then let it cool in a saucepan.
