I was hungry for sushi today and with the squash and cucumber sitting in the refrigerator without any other purpose, I went ahead and threw a few rolls together.
First up, I made a Philadelphia roll using the salmon that was in the freezer. Didn’t pack the flavor punch I wanted, but with the cucumber and cream cheese, it worked.
Next came the scallop rolls. Two scallops weren’t enough to make two different rolls, so I ate the extra pieces while I was rolling. Made one roll with scallops, green peppers, and yellow squash. I should have added the wasabi mayo, but I didn’t bother making any this go around.
Finally, I used the extra peppers and squash to make my tasty pepper/squash maki rolls. 
Since I only made the three rolls, I decided to go ahead and boil some water to reconstitute the Kikkoman shiro miso soup and then I used the rest of the water for tea. I also had some leftover rice, so I clumped it into balls and plated it.
Yeah, I used paper plates. Not exactly aesthetically pleasing, but it saves on having to do all the dishes in the end. I had enough to wash as it was. I didn’t need the extra plates to add to the work.
