
The other day, when I was not feeling well, I wanted to eat soft and soupy rice dish. Luckily I had Silken Tofu and cooked this dish. Probably it took me less than 5 minutes to cooked it. I didn’t cook Rice. I just warmed up leftover cooked Rice. If you are tired and feeling a little down, try this dish. It is very comforting and actually quite nutritious.

1 Serving
Ingredients
150g Silken Tofu *broken OR cut into chunky pieces
1 Egg *whisked
1/2 tablespoon Potato Starch OR Corn Starch *mixed with 1/2 tablespoon Water
1 serving warm Cooked Rice
Finely chopped Spring Onion
1/4 sheet Nori *torn in to small pieces
Sauce
1/2 cup Chicken Stock *OR 1/2 cup Water & 1/2 teaspoon Asian Chicken Bouillon Powder
1 teaspoon Sake (Rice Wine) *optional
1 teaspoon Soy Sauce
1 teaspoon Mirin
Salt & White Pepper
*Note: Today I added 1/8 teaspoon Salt, but you should season it very lightly, especially when you are not feeling well.
Method
Combine all the Sauce ingredients in a small frying pan OR saucepan. Alter the amount of Salt to suit your taste.
Bring to the boil and gradually add Potato Starch (OR Corn Starch) mixture stirring well. The sauce thickens instantly, add Silken Tofu and mix to combine.
Pour the whisked Egg over the Tofu pieces, gently mix, then remove from heat. DO NOT overcook the Egg.
Half fill a bowl with warm Cooked Rice and cover it with the Tofu and Egg mixture. Add some Spring Onion and Nori, and enjoy.
