The word gyuto in Japanese means ‘beef sword’. The gyuto knife was inspired by the typical European chef’s knife so it is designed to be a longer blade than most other kitchen knives. Also, in early times most of the Japanese knives came as a single beveled design where only one side of the knife was sharpened in order to provide the chef with precise and clean cuts due to its sharper profile. In today’s times it is often more likely to find double beveled sharpened blades as more people who cook prefer to have a knife that they can use for multiple purposes and is also left and right hand friendly. Since a single beveled gyuto is often utilized for carving large cuts of meat as its main purpose, it is rare to find a single beveled design but we wanted this knife to stay true to tradition and have a knife set that allows you the proper tool for the specific task at hand so we made our particular gyuto knife as a right handed single beveled design to handle any beefy tasks. But don’t be mistaken that this knife should only have one purpose, it is still a knife that can handle most other tasks with ease.

The santoku, which means ‘three virtues’ in Japanese is a double beveled blade where it is sharpened on both sides to allow versatility in any undertaking in the kitchen. The santoku is shorter than the gyuto but taller in profile for maneuverability and was purposefully designed to handle it’s three virtues: cutting fish, meat and vegetables. This knife is our true all-purpose knife that incorporates a few different aspects of other knives in order to allow it to be used for several different tasks that you encounter when you are cooking. Its knife edge is more downward which allows for precision cuts and has a flatter profile than the gyuto but not as flat as the nakiri allowing you to chop in a more exacting up and down motion rather than a rocking type of cut which sometimes leaves you with uneven pieces. This knife will undoubtedly be you’re most used and comfortable knife to use because of its versatileness.

A western style equivalent, the nakiri is a double edged straight blade with a flat blade edge. As with all of our other knives, it is a full tang design which lends to its ability to cut into harder skinned produce such as pumpkins and squash. Our knives are designed and developed after the traditional Japanese chef knives that many love to use but are often unable to afford. We decided to bridge that gap by bringing to our people the ability to afford a reasonably priced knife that has all the inherent attributes that make Japanese knives premier. We believe we have accomplished this goal by ensuring our knives replicate to the finest detail of what makes a traditional Japanese knife; from the wooden handle and metal hilt to the high carbon stainless steel used for the blade. Our goal was to design a knife that resembled what was an authentic traditional Japanese knife and we have accomplished this goal with our knife set. And we have also partnered with a team in China that was able to bring our design to life. We are excited and honored to share the result of years of our design and development with you.

TRADITIONAL DESIGN WITH MODERN SENSIBILITY

We chose to design our knives after the traditional design of the Japanese knives but made sure that we incorporated materials for longevity and felt best in hand. Our blade dimensions are exact when taking into account the task of each knife to ensure that we tweak them accordingly. All of our knives are a full-tang design meaning that the blade runs throughout the handle. We also wanted the weight of each knife to be balanced but slightly front heavy so we ensured precise weight distribution in the handle to accomplish this. We sourced Rosewood for our handles because of its inherent ability to resist wear and for its gorgeous appearance. Our blades are a 420HC stainless steel with a 55 rating on the Rockwell hardness scale. This means that our knives will maintain an edge and get through the toughest of tasks but will be easily resharpen. Our hilt is a sturdy alloy to hold our knives together and last a long time. Quite simply, our knives are designed for the Ninja in the Kitchen.

All our knives are hand sharpened to a razor edge and then hand assembled by incredibly skilled knife makers in China who have been doing this for many generations. We stopped at nothing to ensure that we were sourcing the best materials for our knives and having the best people in the industry put them together. Our stainless steel is from Germany and our handles are made from sustainably sourced Rosewood from Madagascar. Each knife goes through several quality inspections such as handle density, weight distribution, appearance and craftsmanship before it is packaged and is ready to be sent to our customers.
