Enoki ‘Mochi’ Pancakes – Hiroko’s Recipes

These are savoury pancakes that have unique rubbery texture similar to Mochi. You can make these Mochi Pancakes using Plain Flour only, but the texture would be slightly different. If you use Plain Flour only, alter the amount of Stock. The batter should be quite thin. These Enoki ‘Mochi’ Pancakes are great for snack OR drinking. I would enjoy with chilled Beer.

Makes

2 to 3 Servings

Ingredients

100g Enoki Mushrooms *cut into 2-3cm pieces
1 Spring Onion *finely chopped
Oil for cooking *I used Canola Oil
Soy Sauce OR Ponzu to serve
Crispy Chilli Oil OR Rāyu (Chilli Oil) to serve

Batter
1/4 cup Plain Flour
1/4 cup Potato Starch *OR Glutinous Rice Flour
1/2 cup Chicken Stock *OR 1/2 cup Water & 1/2 teaspoon Asian Chicken Bouillon Powder
1/4 teaspoon Salt

Method

Combine the Batter ingredients in a mixing bowl. This batter is quite thin. Add Enoki and Spring Onion, and mix well.Heat a small amount of Oil in a frying pan over medium heat, form small thin pancakes, and cook until both sides are nicely browned. *Note: Today I made 8 pancakes.Serve with Soy Sauce (OR Ponzu) & Chilli Oil.
