Just One Choco Chip Cookie – Hiroko’s Recipes

When you are alone and crave something sweet just for yourself, a mug cake is a good option if you have a microwave. I have shared a variety of mug cake recipes on this website. Here is another recipe for you to try. It’s not a cake. It’s a rather large Chocolate Chip Cookie. If you don’t have Chocolate Chips, just chop up a piece of Chocolate. Today I baked it in my mini oven toaster using its oven function. It took 15 minutes to bake.

Makes

1 x 10cm Chocolate Chip Cookie

Ingredients

1 tablespoon (15g) Butter *melted
1 tablespoon Brown Sugar OR White Sugar
1 pinch Salt
1/2 tablespoon Milk
3 tablespoons Self-Raising Flour
1 tablespoon Chocolate Chips
1 tablespoon Chopped Walnuts *optional

Method

Place Butter in a heat-proof bowl and heat in the microwave until melt. It took 15 seconds using 1000W microwave.

Add Brown Sugar (OR White Sugar), Salt and Milk, and mix well. Add Self-Raising Flour and mix well. Add Chocolate Chips and Walnuts, and mix to combine.

Line a small baking tray with baking paper, spoon the dough on the tray, and form a flat round. Bake in the preheated oven OR oven toaster at 180℃ for 12 to 15 minutes OR until golden.

The cookie will harden when cooled, but I ate it while it was still soft. It was hard to wait.
