Traditional soy sauce brewed in wooden barrels is prepared in the cold season and fermentation begins in summer.

Rather than artificial temperature control, the wooden barrels create the perfect environment for soy sauce throughout the changing seasons.

The lifespan of a wooden barrel is said to be 150 years. Over their long history, wooden barrels have developed an ecosystem of microbes, which over time gives rise to the classic flavor and taste of soy sauce.

Ingredients (3 servings) 500g pork belly (block-size), 400mL water, 200mL cooking sake, 100mL Yamasan Tamari Soy Sauce, A slice of ginger, 50mL mirin (sweet sake), 3 tbsp sugar

Cook the pork belly until browned on all sides, then blanch. When blanching, cover with aluminum foil or cooking paper. After blanching, cut the pork, add all the ingredients and simmer slowly over low heat. The slow cooking process breaks down the fat, resulting in a softer texture.

1. Mix [A] and cook hamburger steak in a pan. 2. Once browned, add [B] and when it becomes shiny and the flavors have blended, turn off the heat. 3. Toast the buns in the toaster oven for about 2 minutes, then fold them in as shown in the image.

Once cooked, add [A] and turn the heat to medium, Turn the salmon over and mix until just enough sauce remains in the pan. 3. Arrange on a plate and pour the remaining sauce over the top.

Ingredients (2 serving) Chicken thigh: 250g, Konjac noodles: 200g, Green onion: 200g, Grilled

Yamasan Tamari Soy Sauce: 1 tbsp, 1 tbsp

Heat oil in a pan over medium heat and add chicken and green onion. Add sugar and tamari soy sauce (1 tbsp each) and bake without browning. Add the konjac noodles and tofu, add tamari soy sauce (1 tbsp), add the crown daises, and simmer until ingredients are soft.
