Sweet Chestnut Paste – Hiroko’s Recipes

I have been wanting to make ‘Mont Blanc Cake’ and looking for Sweet Chestnut Paste at various stores, but I couldn’t find it. Canned Sweet Chestnut Paste is available for online purchase, but it is very expensive. Then I realised that almost all Asian grocery stores sell Roasted & Peeled Chestnuts, and I can make Sweet Chestnut Paste using them. I tried it today and it was absolutely easy! The colour of the paste was a little too light when I made it, but it turned darker next day.

Makes

About 220g

Ingredients

150g Roasted & Peeled Chestnuts

4 tablespoons Sugar *alter the amount to suit your taste
1 pinch Salt
3 tablespoons Water *OR Milk, add extra as required
1/2 teaspoon Rum *optional, OR a few drops Vanilla Extract

Method

If the Chestnuts have unpleasant smell, rinse under boiling water.

Place all ingredients in a jug OR suitable bowl, and use a hand blender to blend into a smooth paste, adding extra Water (OR Milk), until desired consistency is achieved.

*Note: Small food processor might be an ideal tool to blend the ingredinets.
